Kombadi Vade (Malvani Recipes)
Malvani Kombadi Vade (Malvani chicken or Vade Saguti) is growing in popularity internationally with the internet. Kombadi Vade is a combination of 2 Malvani recipes - Kombadi stands for chicken curry while Vade is special Malvani bread which is completely a vegeterian dish and it is similar to puri in shape and size.
Ingredients:
1 Cup Rice flour
Quarter of a cup Gram flour
Half Urad dal
1 Tea spoon Coriander seeds
3 Tea spoon Methi seeds
Half Tea spoon Turmeric powder
Half Tea spoon Cumin powder
3 Tea spoon cooking Oil
Salt to taste
Method:
1. A night before, wash clean Urad Dal at least 3-4 times. Put it in a big vessel and add 4 cups of water to it.
2. Next day morning, filter out the water from it and grind it on a mixer to make thick paste.
3. Grind Coriander seeds and Methi seeds together to make fine powder.
4. Take Rice flour, Turmeric, Coriander - Methi seeds powder, Cumin seeds and salt in a bowl. Heat the oil and add to it and mix well.
5. Pour Urad dal flour in it, add water as necessary and knead into firm dough. Leave it aside for 15-20 mins.
6. Make lemon size balls from the dough. Grease a banana leaf or a thick plastic bag or your palms and pat lightly to spread the ball into round flat shape, just about your palm size.
7. Heat sufficient oil in deep pan. On medium heat, deep fry vade till golden on one side.
